Blueberry Lemon-drop Cookies

Soft, buttery blueberry lemon cookies bursting with fresh blueberries and bright lemon flavor, topped with creamy blue lemon frosting, blue circle sprinkles, and sparkling sugar. Sweet, citrusy, colorful, and just a little bit extra—the perfect little cookie for any occasion.

Ingredients

  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • Zest of two lemons
  • 2 tbsp lemon juice
  • 1 3/4 Cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup Blueberries
  • 1 tbsp flour
  • 8-10 drops Blue Food Coloring

Instructions

  • Toss blueberries with 1 tablespoon flour and set aside.
  • Cream butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in egg, vanilla, lemon zest, and lemon juice.
  • Whisk together flour, baking powder, baking soda, and salt.
  • Gradually mix dry ingredients into the wet ingredients until just combined.
  • Gently fold in blueberries and add blue food coloring to reach your desired shade.
  • Chill dough for 30–45 minutes.
  • Preheat oven to 350°F and line a baking sheet with parchment.
  • Scoop approximately 1½ tablespoons of dough per cookie.
  • Bake for 10–12 minutes, until edges are set and centers remain slightly soft.
  • Cool completely.
  • Whisk together frosting ingredients and tint blue.
  • Spread frosting over cooled cookies.
  • Finish with blue circle sprinkles and blue sparkling sugar.
  • Enjoy!
